Chawanmushi is a popular appetizer in Japan made by steaming eggs. Various ingredients, such as shiitake mushrooms, chicken and shrimps, can be used. In Japan, chawanmushi are often cooked in special cups. But they still can be made without those specific containers.
Ingredients (3 servings):
2 eggs
2 Shiitake mushroom
15g chicken thigh
360cc water
2 teaspoons dashi
1 teaspoon soy sauce
1 teaspoon mirin
1 pinch salt
Preparation:
Cut chicken and shiitake mushrooms into small pieces for them to be able to put them in cups. Boil water, put dashi in it, and keep it at room temperature.
Steps:
1. Crack eggs into a bowl, add water and other ingredients, and mix them without making bubbles.
2. Put some cut ingredients in each cup and pour what you make in step 1.
3. Fill a deep frying pan or a pot with 5cm of water and bring it to a boil.
4. Use an aluminum foil sheet as a lid to cover the cups and place them in a boiled pan/pot.
5. Put the lid on the pan/pot and steam on high heat for 3 minutes and low heat for 15~20 minutes.
6. Turn off the heat, and leave it for another 7 minutes with the lid on.
7. Ready to serve!
Note:
This recipe uses chicken and shiitake mushrooms, but you can choose the ingredients you like. However, it is recommended to use a small number of ingredients in order to enjoy the taste of dashi.
