Japanese potato salad is a side dish consisting of boiled potatoes and other ingredients. It is creamy, but you also can enjoy its textual crunch. Also, it can be made with what is at home, and that is one of the reasons why it is such a popular food in Japan.
Ingredients (4 servings):
3-4 potatoes (400g)
2 eggs
1 cucumber
3-5 cm carrot
⅓ onion
3 slices ham
1 teaspoon salt
4 tablespoons mayonnaise
2 teaspoons vinegar
Pepper as needed
Water as needed
Preparation:
Peel potatoes and cut them into 2cm squares, slice cucumber and onion thinly, slice onion and in water for a while, dice ham slices.
Steps:
1. Add salt to a pot of water, put potatoes in it and heat on high heat. When it comes to a boil, change to low heat and boil for 10 minutes.
2. Make boiled eggs. Put enough water in a pot so that eggs are fully covered by water, and boil on medium high heat for 12 minutes. After boiling, soak them in cold water.
3. When the potatoes are soft enough, turn the heat off, drain and transfer them to a bowl. Then add vinegar while potatoes are warm, and crush them. Once they are crushed, set it aside to remove the rough heat.
4. Put cucumber, onion and carrot in a bowl, add a pinch of salt to it and knead everything together. Leave it for 10 minutes, and wash with water and squeeze well.
5. Finely chop the boiled eggs.
6. Put potatoes, boiled eggs, ham, and vegetables in one bowl, add mayonnaise and mix well. Season with pepper.
7. Ready to serve!
