Yaki udon is a dish made with Japanese thick, white noodles “udon”. The simplest way to cook udon is just boiling it and eating it with dashi soup, but it is also common and popular to fry it with vegetables like you do when cooking yaki udon.
Ingredients (2 servings):
2 servings udon noodles
100g boneless pork ribs
½ carrot
½ onion
4 cabbage leaves
1 tablespoon soy sauce
1 tablespoon cooking sake
1 tablespoon water
2 teaspoons dashi
Salt and pepper as needed
Cooking oil as needed
5g bonito flakes (option)
Preparation:
Slice onion, cut carrot into half moon slices, and cut pork ribs and cabbage leaves into small pieces.
Steps:
1. In a cup or a small bowl, add soy sauce, water, cooking sake and dashi and mix them.
2. Pour oil in a frying pan, heat it on medium heat, then put meat and stir fry until its color changes from pink.
3. Put all the vegetables there and stir fry until vegetables are soft and cooked through.
4. Add udon noodles and mixed seasonings from Step 1 to the pan, and stir fry well while loosening udon.
5. Add bonito flakes if you want, and season with salt and pepper.
6. Ready to serve!
Note:
When using frozen udon noodles, you need to take some extra, but simple and easy steps before step 4:
1. Fill a pot with water and heat it. When it comes to a boil, put udon in it.
2. Boil for a minute and wait until udon is loosened.
3. Drain udon.
